I recently had a chance to taste several of the products from Boccalone. Based out of Northern California, Boccalone is another player in the handful of artisanal specialty food makers giving us foodies another reason to look no further than California for world class meats. I not yet sure where to get their products but as soon as I find out I’ll let you all know. They make pancetta, prosciutto, lardo (..pizza!), quanciale and a dozen or so other items. Check’em out!!
